We are always on the hunt for new wild game recipes, but this venison recipe is one of our favorites. These poppers are amazing! Try them on the smoker for even better results on these game day favorites. I refer to elk, deer and more as venison so it is an easy substitute for the Chorizo. A spicy venison sausage would be perfect. This is one 1st Ruts easy make ground venison recipes. With that said, let’s jump into how to make this crowd pleasing appetizer.


  • 12 Large Jalepenos
  • 2 Bricks Cream Cheese 
  • 1 Small Bag Shredded Cheese Mexican Style
  • 1 lb Elk Chorizo (Could substitute hot sausage)
  • 1 lb Thick Cut Bacon
  • Toothpicks

  • Process:
  • Set the cream cheese out to warm up prior to starting.
  • Cut jalapeños in half lengthwise and remove the seeds and ribs.
  • Brown the elk chorizo in a pan.
  • Combine the cream cheese, shredded cheese and elk chorizo in a bowl. Stir until evenly mixed.
  • With a spoon, fill the jalapeños with cream cheese mixture.
  • Cut cut the bacon strips in half (can do the whole package at once).
  • Wrap the filled jalapeños with a half strip of bacon and secure with a toothpick.
  • Now you are ready to grill/smoke.
  • Preheat the smoker to 250 degrees (smoke for 10 minutes).
  • Increase temp to 350 degrees and cook until the bacon is cooked to your taste (crispy vs chewy). This usually takes around 10 minutes.
